More fall yummy-ness!

Day 18 in this 31 day challenge!


First of all I just have to say or yell for that matter:

I  L O V E   F A L L  ! ! ! 

Tonight I baked some yummy, I mean YUMMY pumpkin bars

Here is the southern bell Paula Dean’s recipe on

Pumpkin Bars

Mix together:

  • 4 eggs
  • 1 2/3 cups granulated sugar
  • 1 cup vegetable oil
  • 15-ounce can pumpkin
  • 2 cups sifted all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
Remember to scrap to ensure mixing well.
{ Don’t forget the taste testy! }
Put batter in a (sprayed) 9 X 13 pan


  • 8-ounce package cream cheese, softened
  • 1/2 cup butter or margarine, softened
  • 2 cups sifted confectioners’ sugar
  • 1 teaspoon vanilla extract

Bake for 30 min on 350.  {Make sure the center in baked and not mushy.  I pulled mine out of the oven too soon and the middle was mushy, gushy!}

AFTER bars are cooled, load on the icing and:

    Ranch Potatoes

    6-8 medium potatoes
    Peel and bring to a boil, cook for 10 minutes (will not be completly cooked), Then cool till completly cold
    Dice into 1/2″ cubes

    1/2 cup sour cream
    1 cup ranch dressing
    1 cup chedder cheese
    1/8 cup bacon bits
    1 tsp. parsley

    Mix together and toss with diced potatoes and bake at 350 degrees for 45 minutes.

    When done top with 1/8 cup bacon bits and 1/2 cup chedder cheese and let set till cheese is melted.

    P.S. I baked them for 45 minutes but they were not done so you may need to bake them longer. They are really good and enjoy
